MinutesAn easy and quick meal using your food storage.
Ingredients
2 quarts bottled shredded chicken or turkey, drained
1 can chopped chilies
3 small cans cream of chicken soup
flour tortilla shells warmed
1 small can of enchilada sauce (red or green, your choice)
shredded cheese (as much as you want)
- Garnishes (Optional)
sour cream
sliced avacados
lettuce
salsa
Directions
- Preheat oven to 350ºF
- Open quart jars of chicken or turkey and drain the chicken stock, save for another application.
- In a saucepan, mix together the turkey, cream of chicken soup, and green chilies.
- Warm through.
- Spray 13-by-9 baking dish with nonstick spray.
- Warm tortillas, and add warm meat filling to the tortillas. Fold/ Roll up and place in a baking dish seam side down.
- When the baking dish is full, cover the tortillas with enchilada sauce and spread cheese over top.
- Bake until the cheese on top is all melted. About 15 minutes.
- To serve, garnish with lettuce, sour cream, and sliced avocados. Feel free to add salsa too if you want.
