A simple one-pot dish using leftover turkey and fresh vegetables.

Ingredients

  • 2 cups cooked turkey, shredded

  • 1 cup chicken broth

  • 1 cup peas

  • 1 cup carrots, sliced

  • 1 cup onion, chopped

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 0.5 teaspoon black pepper

  • 2 cups cooked rice

Directions

  • Heat olive oil in a large pot over medium heat, add onion, and sauté until softened, about five minutes.
