Turkey Curry

minutesThis is a mild Indian curry served over rice.
Ingredients
4 Tbs butter
2 Tbs curry powder
1 1/2 c chopped onion
1/2 tsp ground ginger
2 c chicken broth
1 8-9 oz can of crushed pineapple, undrained
3 c cooked turkey
2 Tbs lemon juice
2 c cooked rice for serving
2 Tbs flour
1 can coconut milk
2 c diced sweet potato, cooked
Directions
- Melt the butter in a large skillet and add the curry powder.
- Sauté the chopped onions in the melted butter until soft and translucent.
- Stir in the flour and ginger. Mix out all of the clumps.
- Add chicken broth and stir until smooth.
- Add in coconut milk.
- Stir in crushed pineapple.
- Add in cubed or shredded turkey, however, you have it in bite size pieces. Stir to combine.
- Add in the diced sweet potato.
- Cover mixture and heat through. It probably will take around 10 minutes.
- Finish by adding in the lemon juice and stir to combine.
- Serve over cooked rice.
You can garnish with fresh cilantro or parsley if you choose.
Notes
- You can leave out the coconut milk and the sweet potatoes if you choose.
- This is paired well with coconut mango rice pudding.
- Can substitute chicken for turkey as well.
