This is a mild Indian curry served over rice.

Ingredients

  • 4 Tbs butter

  • 2 Tbs curry powder

  • 1 1/2 c chopped onion

  • 1/2 tsp ground ginger

  • 2 c chicken broth

  • 1 8-9 oz can of crushed pineapple, undrained

  • 3 c cooked turkey

  • 2 Tbs lemon juice

  • 2 c cooked rice for serving

  • 2 Tbs flour

  • 1 can coconut milk

  • 2 c diced sweet potato, cooked

Directions

  • Melt the butter in a large skillet and add the curry powder.
  • Sauté the chopped onions in the melted butter until soft and translucent.
  • Stir in the flour and ginger. Mix out all of the clumps.
  • Add chicken broth and stir until smooth.
  • Add in coconut milk.
  • Stir in crushed pineapple.
  • Add in cubed or shredded turkey, however, you have it in bite size pieces. Stir to combine.
  • Add in the diced sweet potato.
  • Cover mixture and heat through. It probably will take around 10 minutes.
  • Finish by adding in the lemon juice and stir to combine.
  • Serve over cooked rice.
    You can garnish with fresh cilantro or parsley if you choose.

Notes

  • You can leave out the coconut milk and the sweet potatoes if you choose.
  • This is paired well with coconut mango rice pudding.
  • Can substitute chicken for turkey as well.
