Mango Salsa

minutesSo this is a basic outline for the salsa. If you like something, a little more or less change the quantities.
Ingredients
2 mangos, diced (or 2 cans diced mango)
1 can black beans
1/2 serrano pepper (or a whole one, if you like it spicy)
1/2 red onion, diced
6 medium to large tomatoes, diced
1 1/2 c cilantro, chopped
1 lime
Directions
- Dice the red onion, and put into a small bowl.
- Roll the lime to make it easier to juice, and squeeze the juice of the entire lime over the red onion and let it sit to take a little of the bite out of the onion.
- In a large bowl, add the chopped tomatoes, cilantro, and pepper.
- If using fresh mangoes, peel and remove the pit, then chop into chunks. If using canned, drain the liquid before adding to the tomatoes in the bowl.
- Drain and rinse the black beans before adding them to the mix.
- Finally, add the red onion to the bowl, including the lime juice.
- Mix gently until combined.
- Eat.
