So this is a basic outline for the salsa. If you like something, a little more or less change the quantities.

Ingredients

  • 2 mangos, diced (or 2 cans diced mango)

  • 1 can black beans

  • 1/2 serrano pepper (or a whole one, if you like it spicy)

  • 1/2 red onion, diced

  • 6 medium to large tomatoes, diced

  • 1 1/2 c cilantro, chopped

  • 1 lime

Directions

  • Dice the red onion, and put into a small bowl.
  • Roll the lime to make it easier to juice, and squeeze the juice of the entire lime over the red onion and let it sit to take a little of the bite out of the onion.
  • In a large bowl, add the chopped tomatoes, cilantro, and pepper.
  • If using fresh mangoes, peel and remove the pit, then chop into chunks. If using canned, drain the liquid before adding to the tomatoes in the bowl.
  • Drain and rinse the black beans before adding them to the mix.
  • Finally, add the red onion to the bowl, including the lime juice.
  • Mix gently until combined.
  • Eat.
