Ingredients
- Chicken Marinade
3 lbs Thinly sliced chicken
1 lemon, juiced
1 Tbs Dill
2 Tbs Lemon Pepper
1 tsp Italian seasoning
1/3 c Olive oil
- Tzatziki Sauce
2 c Greek yogurt
1/2 Cucumber, peeled, seeded, and shredded
1 Tbs Lemon Juice
1 Tbs Dill weed
1 Tbs Minced garlic
2 tsp chopped fresh mint
Salt and pepper to taste
- Gyro Makings
Pita bread
Tomatoes (optional)
Lettuce (optional)
Sliced red onion or pickled onions (optional)
Feta cheese (optional)
Lemon slices (optional)
Directions
- Slice chicken thin af.
- Marinate chicken in a marinade bag for 10 minutes to no longer than 24 hours, whatever time you have available.
- Heat a big cast iron skillet screaming hot, coat it with olive oil, and throw the chicken in. (You want brown, not drab grey chicken, so don’t put too much in the pan at a time and overcrowd it.)
- Cook until no longer pink and until the internal temperature is 165ºF.
- Complete with remaining chicken, and remove cooked chicken to a bowl.
- Deglaze pan with white wine, chicken stock, or vegetable stock (your choice).
- Put the deglazed frond (sauce) over the chicken in the bowl.
- Gyro Assembly
- Use your favorite method to warm a pita.
- Top warm pita with chicken and tzatziki sauce and whichever toppings you choose.
Notes
- If you don’t like onions, you can put them in lemon juice to take heat out.
