The trick to these brownies is to have the least amount of air possible. So don’t use a whisk.

Ingredients

  • Brownies
  • 3/4 c unsalted butter

  • 1 1/2 c sugar

  • 1/2 c light brown sugar

  • 3 large eggs

  • 1 egg yolk

  • 1 Tbs vanilla

  • 1/4 tsp baking soda

  • 2 Tbs cornstarch

  • 1 1/2 c cocoa powder

  • 1 c all purpose flour

  • 1/4 c vegetable oil

  • Chocolate Brownie Ganache Topping
  • 1 1/2 c semi sweet chocolate chips

  • 6 Tbs butter

  • 1/2 c whole milk

Directions

  • Preheat oven to 350ºF. Prepare a greased metal pan with parchment paper in the bottom. You can use a glass baking dish, but know it will cook a little harder along the edges. If you use a ceramic pan, it will take a little longer to cook.
  • Mix all the dry ingredients into a bowl (baking soda, cornstarch, cocoa, and flour).
  • In another bowl, mix with a spatula, the sugar, vanilla, eggs and butter. Then fold the oil in gently. Take care not to mix too much air in to the batter.
  • Pour the wet ingredients into the dry and fold in gently.
  • Add batter to the prepared baking dish.
  • Bake brownies 24-26 minutes
  • When done, remove from oven and cool on a rack.
  • Make Brownie Ganache
  • While the brownies are cooling, make the ganache.
  • Add all the ingredients (chocolate chips, milk, and butter) to a double boiler. Heat on medium-low and stir until the chocolate is melted and the ganache is smooth.
  • Pour the ganache over the brownies, and top with sprinkles or mini m&m’s.
  • Put in the refrigerator to set up the ganache and finish cooling the brownies.

Notes

  • These are really rich brownies.
