Kalua Pork: Landlocked Version

Ingredients
Pork Shoulder, as big as you want
Bbq smoke wood (hickory or apple)
Banana leaves (or banana peels are the next best thing)
Salt (1 tsp for 15 lbs pork shoulder)
Directions
- Smoke the pork shoulder with your choice of hardwood. I use hickory and apple wood. For 2 hours or so, or until your level of smokiness enjoyment. Put the meat right on the grill, fat side up. Use indirect heat. Don’t put right over top of the coals.
- Remove from smoker, wrap in banana peels, and put in crock pot for 8-10 hours. You can add the bananas to the crock pot.
- Take meat out of the crock pot, toss out the bananas after cooking, or prank someone with them. Strain and reserve the liquid, and chill the liquid to congeal the fat on top. Then scrape the fat off and discard.
- Shred the pork.
- Warm the cooled liquid and add it to the pork with some salt.
- Serve over cooked rice.
Notes
- Pork was made for smoking. It’s hard to over smoke it. It is a good beginner meat to smoke if you are new to smoking or barbecuing.
