Hootin Annies: Oven Puffed Pancake

I’m not really sure who originally came up with this recipe, but this is how I modify it to make it my own.

They are also called: oven-puffed pancakes or puffed German pancakes. This is a breakfast go-to. We usually at least triple the recipe for our family.

Is it super healthy? No

Is it delicious? Yes.

Top with syrup, fruit, powdered sugar, or, if you are feeling dangerous, Nutella. Or just grab and go.

Ingredients

  • 6 Eggs

  • 1 C Flour

  • 1 C Milk

  • 4 Tbs Butter

  • Dash of salt

Directions

  • Preheat oven 425ยบ F
  • Put in a large cast iron skillet with the butter and let the butter melt as the oven preheats. Or you can use a 9 X 13 pan.
  • In a blender, mix eggs, flour, milk, and salt together.
  • Pour into hot skillet.
  • Bake for 15-18 minutes or until puffy and slightly browned at the edges.
