Berry Buttermilk Pancakes

When I developed this recipe for berry buttermilk pancakes and was trying it out on the youngest kid, I now need to add a disclaimer that should be addressed before making these.

*Disclaimer: These pancakes WILL include actual berries.

Apparently, the youngest kid doesn’t like to mix business with pleasure (fruit and breakfast).

And one other note: They are just as delicious on a paper plate as on fancy porcelain dishes.

Berry Buttermilk Pancakes

Batter may be thin. If using frozen berries, cook time may be a little longer.

Ingredients

  • 3/4 C buttermilk

  • 1/3 water

  • 1 egg

  • 2 Tbs melted butter

  • 1 c flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 Tbs sugar

  • 1 C fresh or frozen berries

Directions

  • In a bowl, mix together dry ingredients: flour, baking powder, salt and sugar.
  • In another small bowl, beat together the wet ingredients: buttermilk, water, egg, and melted butter.
  • Mix the wet ingredients into the dry.
  • Add fruit and gently stir together.
  • Heat a griddle, and spray oil if needed. Pour or scoop batter onto the griddle to the size of pancake you want. Or use about 1/4 c for each pancake.
  • Brown both sides and serve hot.
