Ingredients

  • 1/4 c butter

  • 2 eggs

  • 2 Tbs sugar

  • 1/2 tsp salt

  • 2 c whole milk

  • 1 c flour (all-purpose is fine)

  • Optional toppings

Directions

  • Put a 13-inch cast iron skillet in the oven and turn it on to 400ºF.
  • In a bowl, whisk together eggs, sugar and salt.
  • Put butter in the skillet to melt.
  • Measure out the milk and flour.
  • Add half of the milk to the egg mixture and whisk well to combine.
  • Then add the flour and mix until smooth.
  • Add the rest of the milk and whisk until there are no lumps.
  • Pour into hot melted butter in the skillet.
  • Optional: add fruit or other toppings if you so choose.
  • Bake
  • Bake at 400ºF for 35 to 40 minutes or until nicely browned and puffy on top.
  • Cut and serve. You can put toppings on now if you would rather.

Notes

  • You can use a regular 13-by-9-inch pan if you don’t have a cast iron skillet.
