Finnish Pancakes: Kropsu

1/4 c butter
2 eggs
2 Tbs sugar
1/2 tsp salt
2 c whole milk
1 c flour (all-purpose is fine)

Directions
- Put a 13-inch cast iron skillet in the oven and turn it on to 400ºF.
- In a bowl, whisk together eggs, sugar and salt.
- Put butter in the skillet to melt.
- Measure out the milk and flour.
- Add half of the milk to the egg mixture and whisk well to combine.
- Then add the flour and mix until smooth.
- Add the rest of the milk and whisk until there are no lumps.
- Pour into hot melted butter in the skillet.
- Optional: add fruit or other toppings if you so choose.
- Bake
- Bake at 400ºF for 35 to 40 minutes or until nicely browned and puffy on top.
- Cut and serve. You can put toppings on now if you would rather.
Notes
- You can use a regular 13-by-9-inch pan if you don’t have a cast iron skillet.
