This easy recipe calls them yams, but they are really called sweet potatoes.

4 lbs sweet potatoes, cut into rounds
1/2 c butter, melted
3/4 c brown sugar
16 oz bag of mini marshmallows
Pecans for topping if you choose.
Directions
- Preheat oven to 350ºF
- Peel sweet potatoes and cut them into round slices.
- Either lay the rounds nicely in a 9 by 13-inch baking dish or do as I do and just toss them all in.
- Melt the butter and pour evenly over the sweet potato slices.
- Sprinkle the brown sugar over the top and lightly toss to coat everything.
- Bake for about 45 to 50 minutes or until the sweet potatoes are fork-tender.
- Top the casserole with all of the marshmallows, and bake another 5 minutes or so or until the marshmallows are toasty and browned. Keep a close eye on this. It may not take as long depending on your oven.
- Serve immediately.
Notes
- You can use canned sweet potatoes if you only have those on hand.
