minutesHere is one of the annual holiday favorites at our house. We never seem to make enough.
Ingredients
1 stick butter (softened)
1 lb confectioners sugar (powdered sugar)
2 cups peanut butter
3 cups Rice Krispies
12 oz chocolate chips
1/3 stick parafene wax (or 1 Tbs Crisco shortening)
Directions
- Make candy balls
- Mix together butter and peanut butter until smooth.
- Add confectioners sugar and mix well.
- Gently stir in Rice Krispies
- Chill
- Form candy balls
- When chilled, roll with hands into small balls, and chill again.
- Dip in chocolate
- In a small sauce pan, boil some water. Add a metal mixing bowl on top. (This makes a double boiler. You could use one if you have one.)
- Pour in chocolate and add wax or the shortening which ever you are using. Stir until smooth.
- Dip and cover the candy balls in chocolate and put on parchment paper.
- Chill again.
Notes
- You can melt the chocolate in the microwave for 1 minute, and then stir, adding a little time if needed to make it smooth. But it is better to use the double boiler, because it keeps the chocolate warm and makes it easier to coat the candies.
