For 2 hours or so, or until your level of smokiness enjoyment. Put the meat right on the grill, fat side up. Use indirect heat. Don&#8217;t put right over top of the coals. </li><li id="wpzoom-rcb-direction-step-651ee2a162c09" class="direction-step">Remove from smoker, wrap in banana peels, and put in crock pot for 8-10 hours. Strain and reserve the liquid, and chill the liquid to congeal the fat on top.
